{"id":1020,"date":"2015-03-19T19:44:14","date_gmt":"2015-03-19T19:44:14","guid":{"rendered":"http:\/\/packardhealth.org\/?p=1020"},"modified":"2026-04-20T16:43:28","modified_gmt":"2026-04-20T16:43:28","slug":"spinach-ham-gruyere-frittata-eggs-are-making-a-comeback","status":"publish","type":"post","link":"https:\/\/packardhealth.org\/es\/spinach-ham-gruyere-frittata-eggs-are-making-a-comeback\/","title":{"rendered":"Spinach, ham &#038; gruyere frittata &#8211;  Eggs are making a comeback !"},"content":{"rendered":"<div>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-1022\" src=\"https:\/\/packardhealth.org\/wp-content\/uploads\/2017\/02\/frittata-01.jpg\" alt=\"frittata\" width=\"264\" height=\"210\" srcset=\"https:\/\/packardhealth.org\/wp-content\/uploads\/2017\/02\/frittata-01.jpg 264w, https:\/\/packardhealth.org\/wp-content\/uploads\/2017\/02\/frittata-01-216x172.jpg 216w\" sizes=\"auto, (max-width: 264px) 100vw, 264px\" \/>New government dietary recommendations (2\/20\/2015) state that dietary cholesterol now is&nbsp;&#8220;not considered a nutrient of concern for over-consumption.&#8221;<\/p>\n<div>\n<p>So, consider the egg &#8211; and this light &amp; yummy recipe.<\/p>\n<\/div>\n<\/div>\n<p>Thanks, Karen Koeppe, Packard Health&#8217;s Registered Dietitian, for serving it up.<\/p>\n<hr>\n<p><strong>Spinach, Ham, and Gruyere Frittata <\/strong>(<em>Adapted from <span style=\"text-decoration: underline;\">Cooking Light<\/span><\/em>)<\/p>\n<p style=\"padding-left: 30px;\">6 large eggs + 2 large egg whites<br \/>\n1\/4 tsp Kosher salt<br \/>\n1\/4 tsp freshly-ground black pepper<br \/>\nDash nutmeg<br \/>\n1\/3 cup 2% milk<br \/>\n3-4 cups organic baby spinach (*can also add 1\/2 c. thinly-sliced mushrooms or red pepper strips)<br \/>\n2 cloves garlic (minced)<br \/>\n1 shallot (minced)<br \/>\n1 Tbsp extra-virgin olive oil<br \/>\n2 oz prosciutto or Canadian bacon (crisped and diced) &#8211; optional<br \/>\n1 Tbsp fresh chives, chopped<br \/>\n4 oz. shredded Gruyere or Swiss cheese<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>1. Preheat broiler to &#8220;high&#8221;<\/p>\n<p>2. Combine eggs, egg whites, salt, pepper, nutmeg and milk; whisk till blended. Set aside.<\/p>\n<p>3. Heat olive oil in a 9-inch cast iron skillet over medium heat and saute the garlic, shallot for 1-2 minutes. Add baby spinach and saute (stirring often) until wilted.<\/p>\n<p>4. Layer in prosciutto (or Canadian bacon), chives, then sprinkle shredded cheese on top.<\/p>\n<p>5. Carefully pour egg mixture over cheese. Cook over medium heat 5-6 minutes or til eggs are partially set; then broil for 5 minutes from heat for 3 minutes or til brown and set.<\/p>\n<p>Serve with mixed citrus segments (oranges, grapefruit); can toss with a simple dressing of freshly-squeezed lime juice, Michigan honey, and a sprinkling of poppy seeds if desired.<\/p>","protected":false},"excerpt":{"rendered":"<p>New government dietary recommendations (2\/20\/2015) state that dietary cholesterol now is&nbsp;&#8220;not considered a nutrient of concern for over-consumption.&#8221; So, consider the egg &#8211; and this light &amp; yummy recipe.
