Est\u00e1 adaptada de <em>El nuevo recetario de soul food, para personas con diabetes.<\/em><\/p>\n<p>Gracias, Karen Koeppe, dietista registrada de Packard Health, por\u00a0servirlo. \u00a1Qu\u00e9 rico!<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ensalada de Mango Tropical con Pollo o Camarones<\/strong><\/p>\n<p style=\"padding-left: 30px;\">1\/3 taza de mayonesa reducida en grasa (preferiblemente a base de aceite de canola)<br \/>\n3 cebolletas, cortadas finamente (incluyendo las partes verdes)<br \/>\n2 tazas de pechuga de pollo cocida y picada*<br \/>\n2 tazas de mango maduro picado<br \/>\n1 pimiento verde, sin semillas y picado<br \/>\n2 cucharadas de aceite de canola<br \/>\n1 cucharada de vinagre de sidra de manzana o de arroz<br \/>\n1 cucharada de jugo de lim\u00f3n reci\u00e9n exprimido<br \/>\n1 cucharadita de az\u00facar o miel<br \/>\nMezcla de lechuga de hoja roja y Boston Bibb<\/p>\n<p><strong>M\u00e9todos:<\/strong><br \/>\n1. Combina la mayonesa y la cebolla verde en un recipiente peque\u00f1o, tapa y refrigera. Combina suavemente el pollo, el mango y el pimiento morr\u00f3n en un recipiente grande.<br \/>\n2. Combine el aceite, el vinagre, el jugo de lim\u00f3n y el az\u00facar (o miel) en un recipiente con tapa herm\u00e9tica. Agite bien. Agregue la mayonesa fr\u00eda y la cebolla verde y revuelva bien.<br \/>\nVierte el aderezo sobre los ingredientes de la ensalada y mezcla suavemente. Refrigera por 30 minutos. Para servir, sirva con una cuchara sobre un plato para ensalada forrado con la mezcla de lechugas. Decora con cilantro o menta.<\/p>\n<p>* Sustituye el pollo por camarones cocidos y fr\u00edos.
