Roast, uncovered, in a 425 degree oven for about 30 minutes until tender and golden brown. Stir half-way through.Meanwhile, for filling, saut\u00e9 garlic and onion about 3 minutes, then add pepper strips. Saute for about 3-5 minutes more, then add corn, canned tomatoes, canned beans and all seasonings. Simmer, uncovered about 10 minutes until most juices have evaporated.<\/p>\n<p>Fill each tortilla with 1\u20442 cup filling, 1\/3 cup roasted sweet potatoes, and 1 Tbsp cheese. Roll-up. Place in a rectangular baking pan (coated with non-stick olive oil spray), and bake in a 350 degree oven for 15-20 minutes.
