Recipe from&nbsp;<a href=\"http:\/\/www.diabetesforecast.org\">The Healthy Living Magazine, Diabetes Forecast<\/a>&nbsp;<\/p>\n\n\n\n<p><strong>Pork Tenderloin with Blackberry Sauce&nbsp;<\/strong><\/p>\n\n\n\n<p><strong>Ingredients:&nbsp;<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Parchment paper&nbsp;<\/li><li>2 pork tenderloins (1 lb. each)&nbsp;<\/li><li>1\u20442 tsp Kosher Salt&nbsp;<\/li><li>1\u20442 tsp freshly ground black pepper&nbsp;<\/li><li>11\u20442 Tbsp olive oil&nbsp;<\/li><li>1\u20442 cup no-sugar-added blackberry preserves&nbsp;<\/li><li>1\u20444 cup low-fat, reduced-sodium chicken broth&nbsp;<\/li><li>1 Tbsp red wine vinegar&nbsp;<\/li><li>1 tsp light soy sauce&nbsp;<\/li><li>1 large shallot, peeled and finely minced&nbsp;<\/li><li>1\u20444 cup dry white wine&nbsp;<\/li><\/ul>\n\n\n\n<p><strong>Garnish<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>2 Tbsp freshly minced sage&nbsp;<\/li><li>1 Tbsp lemon zest&nbsp;<\/li><li>1\u20442 cup fresh or frozen (thawed and drained) blackberries&nbsp;<\/li><\/ul>\n\n\n\n<p><strong>Directions:<\/strong><br><strong>1. <\/strong>Preheat oven to 400\u00b0 F. Line baking sheet with parchment paper; set aside.<strong>&nbsp;<\/strong><\/p>\n\n\n\n<p><strong>2. <\/strong>Sprinkle pork tenderloins with salt and pepper. Heat olive oil in a large&nbsp;skillet over medium-high heat. Add pork and sear for 5 to 6 minutes. Turn&nbsp;pork and sear for an additional 5 to 6 minutes. Place pork on the prepared&nbsp;baking sheet and roast for 15 to 17 minutes, until desired doneness.<strong>&nbsp;<\/strong><\/p>\n\n\n\n<p><strong>3. <\/strong>In a small bowl, combine the preserves, broth, vinegar, and soy sauce.<strong>&nbsp;<\/strong><\/p>\n\n\n\n<p><strong>4. <\/strong>Add the shallot and white wine to the skillet and saut\u00e9 for 3 to 4 minutes,&nbsp;until the wine is absorbed and you\u2019re scraping up the brown bits as you&nbsp;saut\u00e9. Add blackberry sauce and simmer on low heat for 1 to 2 minutes. <strong>&nbsp;<\/strong><\/p>\n\n\n\n<p><strong>5. <\/strong>Slice the cooked pork and place on a platter. Drizzle the pork with the&nbsp;blackberry sauce and garnish with the sage, lemon zest, and blackberries.<\/p>\n\n\n\n<p><strong>Karen\u2019s Tip<\/strong><strong>:&nbsp;<\/strong>Serve with roasted multi-color fingerling potatoes (1 lb. scrubbed, cut in half length-wise and tossed with 1 Tbsp of olive oil, a bit of kosher salt and ground pepper). Spread on baking sheet (lined with parchment paper) and nestle the pork tenderloins in the middle of the pan, roast together as directed in the recipe at 400 degrees.
