{"id":473,"date":"2016-09-19T16:12:14","date_gmt":"2016-09-19T16:12:14","guid":{"rendered":"http:\/\/packardhealth.org\/?p=473"},"modified":"2026-04-20T16:33:11","modified_gmt":"2026-04-20T16:33:11","slug":"mi-indian-summer-casserole","status":"publish","type":"post","link":"https:\/\/packardhealth.org\/es\/mi-indian-summer-casserole\/","title":{"rendered":"Michigan Indian summer casserole"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-524 alignleft\" src=\"https:\/\/packardhealth.org\/wp-content\/uploads\/2016\/12\/casserole.jpg\" alt=\"casserole\" width=\"143\" height=\"164\">Enjoy the last days of Indian summer with Michigan sweet corn, peppers and tomatoes.&nbsp;Make sure to visit your favorite Farmers&#8217; Market for the veggie ingredients!<\/p>\n<p>Thank you to Karen Koeppe, Packard Health Registered Dietitian and Certified Diabetes Educator for this recipe.<\/p>\n<hr>\n<p><strong>Michigan Indian Summer Casserole<\/strong><\/p>\n<p><em>Adapted from Mollie Katzen\u2019s Still Life with Menu<\/em><\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>2 cups Michigan sweet corn (freshly-cut from ears, or frozen)<\/li>\n<li>3 large bell peppers (green, yellow, orange \u2013 one of each), diced<\/li>\n<li>2 medium vine-ripened tomatoes (try the Green Zebra heirloom variety), diced<\/li>\n<li>2-3 large cloves of garlic, crushed or minced<\/li>\n<li>1 large shallot, diced<\/li>\n<li>1 Tbsp extra-virgin olive oil<\/li>\n<li>1\u20442 tsp salt (opt)<\/li>\n<li>1 tsp ground cumin<\/li>\n<li>1\u20442 tsp oregano<\/li>\n<li>Several leaves of fresh basil, minced<\/li>\n<li>Lots of freshly ground black pepper<\/li>\n<li>1\u20444 tsp cayenne pepper<\/li>\n<li>1\u20442 cup chopped olives (green and black)<\/li>\n<li>1 4-oz can chopped green chilies<\/li>\n<li>1\u20442-1 cup (packed) grated mild white cheese (Monterrey Jack)<\/li>\n<li>4 large eggs or 1 cup of Egg Beaters egg substitute<\/li>\n<li>1\u20442 c. plain Greek yogurt<\/li>\n<li>Paprika, for dusting the top<\/li>\n<\/ul>\n<p><strong>METHOD:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 375degrees; butter a 6&#215;9 oval casserole dish<\/li>\n<li>In large skillet, sauce the corn, peppers, tomatoes, garlic and shallot in olive oil&nbsp;with salt, cumin, and oregano. Saute quickly over medium-high heat, stirring&nbsp;often. After about 8 minutes, remove from heat.<\/li>\n<li>Stir in basil, pepper, cayenne, olives and green chilies. Stir in cheese until it&nbsp;melts.<\/li>\n<li>Spread mixture into oval casserole. Beat eggs with the plain yogurt and gently&nbsp;pour this mixture over the seasoned veggies.
